How to Spot a Good Sichuan Menu
A good Sichuan menu is not only a list of spicy dishes. It shows cold dishes, tofu, vegetables, noodles, dry-fried dishes, ma-la logic, and regional flavor patterns.
Signals to look for
| Signal | What it means |
|---|---|
| Cold dishes | Cucumber salad, fuqi feipian, mouthwatering chicken, cold noodles. |
| Tofu and vegetables | Mapo tofu, fish-fragrant eggplant, dry-fried green beans. |
| Ma-la language | Clear use of Sichuan peppercorn and chile oil. |
| Noodles | Dan dan noodles or other Sichuan noodle dishes. |
| Spice explanation | Diners can tell which dishes are very spicy or numbing. |
| Pork disclosure | Menu or staff can explain where pork appears. |
Use with caution
A menu is evidence, not proof. A restaurant may have strong food and a weak website, or a polished menu and weak kitchen execution. Use the menu as an ordering tool, not a complete verdict.
