Ingredients
- 1 1/2 lb bone-in chicken pieces
- 4 slices ginger
- 2 scallions
- 1 cup mushrooms
- 1 tbsp Shaoxing wine, optional
- Salt
- White pepper
Method
- Place chicken, ginger, scallions, mushrooms, wine, and salt in a heatproof bowl.
- Set over simmering water.
- Steam gently for 90 minutes to 2 hours.
- Check water below the steamer as needed.
- Season the broth with salt and white pepper.
- Serve chicken and broth together.
