Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 cup water
- 1 tablespoon oil
- Oil for frying
Method
- Mix flour, leavening, salt, water, and oil into a soft dough.
- Rest the dough until relaxed.
- Roll into a rectangle and cut strips.
- Stack strips in pairs and press the center with a chopstick.
- Stretch gently.
- Fry until puffed and golden.
- Drain and serve warm.
Variations and substitutions
- For chicken, beef, shrimp, pork, tofu, or mixed seafood variants, keep the same sauce logic and adjust the cooking time for the protein.
- For allergies or religious dietary needs, check sauces, broth, wrappers, cooking wine, and shared wok or fryer use.
