Vegetarian Red-Braised Tofu

Ingredients

  • 14 oz firm tofu
  • 1 cup mushrooms
  • 2 tbsp neutral oil
  • 2 slices ginger
  • 2 garlic cloves
  • 1 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1 cup vegetable stock
  • 1 tsp cornstarch slurry

Method

  1. Pat tofu dry and pan-sear until golden.
  2. Stir-fry ginger, garlic, and mushrooms.
  3. Add soy sauces, sugar, and stock.
  4. Return tofu and simmer 8–10 minutes.
  5. Thicken lightly with cornstarch slurry.
  6. Finish with scallions if desired.
