Ingredients

  • 1 whole pomfret or mild white fish
  • 2 salted plums or 1 tbsp salted plum sauce
  • 3 slices ginger
  • 1 tomato, sliced
  • 2 shiitake mushrooms, optional
  • 1 tbsp light soy sauce
  • 1 tsp neutral oil
  • Scallions or cilantro

Method

  1. Clean and score fish.
  2. Place ginger, tomato, mushrooms, and salted plum around fish.
  3. Steam until just cooked.
  4. Warm soy sauce and oil.
  5. Spoon sauce over fish.
  6. Finish with herbs.
