Ingredients
- 2 lb pork rib tips or small spare rib pieces
- 1 tablespoon fermented black beans, rinsed and chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger
- 1 tablespoon light soy sauce

- 1 tablespoon Shaoxing wine, optional
- 1 teaspoon cornstarch
- Scallions

Method
- Cut rib tips into small pieces if needed.
- Mix with black beans, garlic, ginger, soy sauce, sugar, wine, and cornstarch.
- Steam until tender, or briefly sear then simmer with a splash of water.
- Reduce sauce until it clings.
- Finish with scallions.
- Serve with rice.
