- 12 oz fresh egg noodles

- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce

- Blanched choy sum
- Pickled green chiles
Method
- Mix dark soy, light soy, oyster sauce, sesame oil, sugar, and hot water.
- Blanch noodles briefly.
- Toss hot noodles with sauce.
- Top with char siu and greens.
