Ingredients
- 1 lb pork ribs
- 1 lotus root, sliced
- 1/2 cup raw peanuts, optional
- 2 dried red dates, optional
- 2 slices ginger
- 8 cups water
- Salt
- White pepper
Method
- Blanch pork ribs and rinse.
- Add pork, lotus root, peanuts, dates, ginger, and water to a pot.
- Bring to a boil and reduce to a simmer.
- Cook 90 minutes to 2 hours.
- Skim as needed.
- Season near the end with salt and white pepper.
