Ingredients
- 1 oz dried wood ear mushrooms
- 2 tbsp black vinegar
- 1 tbsp light soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
- 1 garlic clove
- 1 tbsp chile oil, optional
- Cilantro and scallions
- Salt
Method
- Soak wood ear mushrooms until expanded.
- Trim and rinse well.
- Blanch 1–2 minutes and cool.
- Mix vinegar, soy sauce, sugar, sesame oil, garlic, and chile oil.
- Toss mushrooms with dressing.
- Add herbs and serve.
