Cashew Chicken or Shrimp

Ingredients

  • 12 oz chicken, shrimp, tofu, or another protein
  • 1/2 cup roasted cashews
  • 1 cup celery or zucchini
  • 1/2 cup bell pepper
  • 1/2 cup onion
  • 2 garlic cloves
  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster or mushroom sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch slurry

Method

  1. Prepare protein and vegetables before cooking.
  2. Stir-fry protein until nearly cooked.
  3. Add garlic and vegetables.
  4. Add soy sauce, oyster or mushroom sauce, sugar, and a splash of water.
  5. Return protein if removed.
  6. Thicken lightly.
  7. Fold in cashews at the end so they stay crisp.
