Ingredients

  • 12 oz chicken, beef, shrimp, tofu, or mixed protein
  • 1 lb broccoli florets
  • 2 tablespoons neutral oil
  • 2 garlic cloves, minced
  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster sauce or mushroom sauce
  • 1 teaspoon dark soy sauce, optional
  • 1 teaspoon sugar
  • 1 cup stock or water
  • 1 tablespoon cornstarch slurry

Method

  1. Slice protein thinly and marinate with a little soy sauce and cornstarch if desired.
  2. Blanch or steam broccoli until bright green and crisp-tender.
  3. Stir-fry protein until nearly cooked and remove if needed.
  4. Stir-fry garlic briefly.
  5. Add sauce ingredients and bring to a simmer.
  6. Return protein and broccoli.
  7. Thicken lightly and serve with rice.

Menu-literacy notes

  • Chicken, beef, and shrimp versions are the same recipe family.
  • Oyster sauce is common and contains shellfish.
  • The broccoli should stay green and crisp-tender.

Variations and substitutions

  • For chicken, beef, shrimp, pork, tofu, or mixed seafood variants, keep the same sauce logic and adjust the cooking time for the protein.
  • For allergies or religious dietary needs, check sauces, broth, wrappers, cooking wine, and shared wok or fryer use.
  • For takeout-style dishes, sauce texture matters: the sauce should coat the food rather than become a thin soup.
