American Chinese Recipe

General Tso's Chicken

General Tso’s chicken is an American Chinese dish of fried chicken pieces coated in a sweet, tangy, mildly spicy sauce.

Why this dish works

The dish teaches American Chinese sauce-and-protein logic. The structure is crisp chicken plus a glossy sauce that balances sugar, vinegar, soy, garlic, and chile.

Menu-literacy notes

  • American Chinese format: fried protein plus sauce family.
  • Texture: sauce should coat the chicken without making it immediately soggy.
  • Sweet-spicy balance: vinegar prevents the sauce from becoming flat.
  • Menu role: usually a chef’s special or combination-plate anchor.

Variations and substitutions

  • Bake or air-fry chicken for a lighter version.
  • Use tofu or cauliflower instead of chicken.
  • Add steamed broccoli on the side.
  • Increase vinegar and dried chiles for a sharper version.
